That is kinda the way I was leaning since they said the controls would cost me an extra $500+. Does the trollmaster control work with a tiller? Does it really get you on a set speed and hold it?

Yes the trollmaster will work with a tiller. It does not set a speed though. It sets a RPM, so wave action and wind will effect your speed.

Boat control is much quicker with the tiller. I am also much more comfortable on a tiller than I am on a remote. It is al personal preference though.
If you are going to be doing a lot of backtrolling I would say tiller otherwise I would go with the cock pit control. I have mine at the cockpit and works great(previous owner set it up this way) but also have a Minnkota Vector Trolling motor for backtrolling.
Sounds like you have your boat set up like mine is. I think I will just stay with the motor I got for this season and keep the controls. I also have a Vector on the transom and I use it for backtrolling.
